Pomace or citrus peel contains pectin, but it has to be extracted because it's mixed with other compounds. The material is heated in water, and a processing aid (usually a natural mineral acid, sometimes enzymes) is added to boost extraction. After the pectin dissolves, the leftover solids are removed by filtration-often through multiple filtration steps to fully clarify the pectin solution.
The clarified pectin solution is first concentrated by removing water. Then the pectin is turned into a solid through precipitation-typically by adding salts to force it to solidify. The solid pectin is separated out, washed to remove impurities, and then dried.

The dried pectin is milled into a powder, then tested and blended to standardize its gelling, viscosity, or stabilizing performance. Once consistent, it's packaged and shipped to us to use in our HI-CREATINE bites
